1 onion, chopped fine (about 1/2 cup)

6 cloves garlic, minced (about 2 tablespoons)

8 oz canned diced tomatoes with green chilies (or use your own favorite tomato sauce if you like!

1 cup chicken broth or stock

1 tablespoon tomato paste

1 teaspoon cumin

Salt and pepper to taste

12 small corn tortillas (or maybe you prefer flour tortillas?)

2 cups grated cheddar cheese (or use a vegan cheese!)

Instructions:

Preheat oven to 400F.

In a large skillet, cook the onion and garlic over medium heat until softened.

Add the chicken, tomatoes, tomato paste, cumin, and salt and pepper to taste and mix well.
