1 lb boneless skinless chicken thighs (or other lean meats)
1 onion, chopped fine (about 1/2 cup)
6 cloves garlic, minced (about 2 tablespoons)
8 oz canned diced tomatoes with green chilies (or use your own favorite tomato sauce if you like!
1 cup chicken broth or stock
1 tablespoon tomato paste
1 teaspoon cumin
Salt and pepper to taste
12 small corn tortillas (or maybe you prefer flour tortillas?)
2 cups grated cheddar cheese (or use a vegan cheese!)
Optional garnish: thinly sliced green onions, avocado slices, non-dairy sour cream or yogurt.
Preheat oven to 400F.
In a large skillet, cook the onion and garlic over medium heat until softened.
Add the chicken, tomatoes, tomato paste, cumin, and salt and pepper to taste and mix well.
Add the broth and bring to a simmer.
Cover, reduce heat, and simmer for about 20 minutes or until chicken is cooked through.
Transfer the mixture to a food processor (or keep it on the stove and use an emulsion blender) and blend until smooth.
Pour into a large bowl.
Wrap the tortillas in foil and place on a baking sheet and heat in oven for about 10 minutes.
Ladle about 1/2 cup of the chicken mixture into each tortilla then sprinkle on the cheese and roll up snugly. Place the filled tortillas in a baking dish then pour remaining sauce over the top.
Return to the oven and bake for about 15 minutes or until the cheese is melted and starts to turn golden brown on top.
Garnish with green onions, avocado slices and non-dairy sour cream or yogurt (optional).
