Comfort Food Made Healthier: Kelly Bejelly’s New Paleo Cookbook

Kelly Bejelly is a young woman from the small town of Sespeville, Missouri. She was born with cystic fibrosis and suffers from chronic lung infections. Her life has been difficult but she manages to keep her spirits up through food. She has always loved cooking and loves sharing her recipes with others. When she first started making homemade meals for friends and family, it helped them cope better with their illnesses. Now she wants to share these delicious dishes with everyone else!

In 2010 Kelly decided to start her own business, “The PaleOMG Kitchen”. She wanted to create a place where people could come and learn how to cook healthier foods at home. A place where they could get inspired by other cooks’ creations. So far she has created several healthy meal kits, which are sold all over the world. These kits have become very popular among people suffering from various health problems such as diabetes, cancer, allergies and many more.

Kelly has even received requests from people wanting to make her recipes into cookbooks.

Kelly’s goal is to open a restaurant in the near future so that she can continue sharing her recipes with others. She hopes that one day she will be able to provide healthy meals for everyone. Kelly believes that every person deserves to live a long and happy life and she would like to do everything possible in order for this dream to come true. She has started a Kickstarter project so that she can raise enough money for her restaurant. Backers can get rewards such as a free meal on opening day along with other wonderful perks!

Here is one of the paleo breakfast smoothies called the “Dinosaur Destroyer”: 1 cup of almond milk, a handful of spinach or kale, half of an avocado, a peach and a half of a banana. This smoothie is definitely delicious but be careful, it can knock your socks off.

Here is the “One-eyed Pain”: 1 cup of coffee, 2 tablespoons of organic butter, 2 tablespoons of coconut oil and a tablespoon of chocolate. This is the perfect breakfast if you are an avid hunter who has already bagged a beast and you are relishing in the glory after a successful hunt.

Here is the “Green Beast”: 1 cup of unsweetened matcha tea, a handful of spinach, half of an avocado, 1 tsp. of ginger and a tablespoon of honey. If you love green tea with ginger and honey, you will certainly love this smoothie.

Here is the “Nana Tonic” smoothie: 1 cup of pineapple juice, half of an avocado and half of a banana. This is a delicious smoothie that is very refreshing.
