Chicken shepherd’s pie is one of the most popular dishes among vegans and vegetarians alike. There are many variations on chicken shepherd’s pie, but they all have a similar taste. It is not uncommon to see pictures of chicken shepherd’s pies at any vegan or vegetarian restaurant. The main ingredients used in making chicken shepherd’s pie include eggs, potatoes, carrots, onions and spices such as garlic powder and cayenne pepper.
The main reason why chicken shepherd’s pie is so popular is because it tastes good. It has a nice texture and does not leave you feeling bloated after eating it. If you want to try chicken shepherd’s pie without having to go out and buy some pre-made food, then you can make your own chicken shepherd’s pie from scratch using only basic kitchen equipment. You will need a large pot with boiling water, flour, salt and butter (or oil). You will also need a large mixing bowl, a wooden spoon and measuring cups.

How to make a good Shepherd’s pie
Shepherd’s pie is one of the most popular dishes to cook. It has a nice blend of beef and vegetables topped with mashed potatoes. It is very easy to cook and normally freezable so you can make extra and store it for some other time when you don’t feel like cooking. So here is how to make shepherd’s pie:
Thaw the frozen peas,corn and mixed vegetables out. Put them in a bowl with water so they dont burn or dry out while you prepare the rest of the meal.
Cook the roast and add to the vegetables when cooked. (If using mince, just add it without cooking first)
Preheat oven to 180C (350F). Put the butter into a casserole dish and put into the oven to melt. Take dish out and stir in the flour to make a paste.
Add the milk slowly while stirring. Bring to the boil while continuing to stir.
Put the dish into the oven again and cook for about 15 minutes (until it thickens). Stir every now and then.
Take out of the oven and season to taste. Add the peas, corn, mixed vegetables and roast beef (if using mince just add it now). Stir to mix everything together.
Turn the oven down to 170C (340F) and put the casserole dish inside to cook for about 30 minutes.
When its nearly done, make the mashed potatoes. Add the milk and butter to the mash and season to taste.
To serve, turn out into a bowl and add a generous helping of mash to the top and stir a little into the filling before serving.
Easy Shepherd’s Pie
Shepherd’s pie is a favorite in many families and is very easy to make. Here is an easy version that allows you can get everything into the oven all at once. You will need: 1.5kg (3lbs) of ground beef, 1 large onion, 2 cloves of garlic, a large can of crushed tomatoes, a small can of tomato paste, 1 cup of water, 1 tsp of oregano, 1 tsp of basil, Salt and pepper to taste, 4 large potatoes, 2 cups of milk and 2 cups of shredded cheddar cheese. Here are the directions:
Preheat the oven to 180C/350F. Brown the ground beef with the chopped onions and garlic cloves in a large pan and drain off any fat. Add the crushed tomatoes, tomato paste, water, oregano, basil, salt and pepper. Stir well and bring to a boil then remove from heat.
While that is cooling down a bit, cut the potatoes into large chunks and add to a large pan of boiling water. Cook for about 10 minutes or until soft when tested with a fork. Drain well and then mash them well with the milk and salt and pepper to taste. Fold in the shredded cheddar cheese.
Layer the bottom of a casserole dish with a third of the meat sauce, then a layer of potatoes, then the rest of the meat sauce and finish with the rest of the mashed potatoes. You can either shred the cheese and sprinkle over the top or mix with the mashed potatoes before layering.
Bake in the preheated oven for about 30 minutes or until the top is nicely browned. Let it stand for about 10 minutes before serving.
You can freeze this if you need to by making extra mashed potatoes and just adding a bit more milk when you thaw and reheat it.
NOTE: If you want to make this without the ground beef you can substitute it with 8oz (1 cup) of lentils. You will need to cook them first (follow the instructions on the package) and then add everything else except the mashed potatoes and heat thoroughly. Just before serving add the mashed potatoes as per the recipe above.
